Gyuto Suggestions

My name is Mark, I recently changed careers after being a Sous Chef where we had our knives provided to us. Now that I'm not there anymore, I want to find myself one great knife to do all of my personal cooking. Some of the knives Ive tried to find; Gesshin Ginga, Yusuke, and a Takamura, are sold out, so I could really use some help. Thanks!

1. Right Handed
2. Gyuto
3. Either stainless or carbon is fine, but I've never used carbon before.
4. 240 or 210 if 240 is unavailable
5. Japanese Handle
6. 300$ budget (Fiance talked me down a bit)
7. I know how to sharpen to some extent, but our knives were sharpened for us every week, and I am very out of practice.

Mark, based on your indicated tastes, take a very serious look at the Konosuke HD 240 Gyuto: http://www.chefknivestogo.com/kohdwa24.html. These are truly one of the gold standards in laser style Gyuto's. You will absolutely LOVE it!

The Takamura in stock has a western handle, I was looking for the Japanese style handle. I know that Takamura has a Hana line that includes that kind of handle, but I don't think CKTG carries them.

Steve, you and Mark both recommended the Konosuke, so that is definitely one I will be considering. Thank you for the recommendation!

I'll have to pile on and say 240mm Konosuke HD too. The semi-stainless is very easy to sharpen and holds it's edge very well. Less needy than full carbon. My go-to knife.

Any suggestions other than Konosuke? I'll be honest, I'm not partial to how it looks. Any hand made suggestions?

It's a bit more ($40 for 240mm & $11 for 210mm) but I love, love, love my Masakage Koishi. It is a functional piece of art that is simply a joy to use.

GLITCH <> Oh yes, I have suggestions, but you haven't said a word about what traits you like in a knife... what you look for in a knife.. how you expect a knife to perform & on what. And thus I wait for the conversation, to become one... rather then a personal favorites poster board. ;)
