I'm currently looking for the perfect starter gyuto for my boyfriend. We both do quite a bit of cooking with him mainly dealing with the meat (chicken and beef) and me slicing up the vegetables and doing the actual cooking (which is mainly Chinese and some Japanese). I'm looking for a gyuto we can both enjoy and will be a great start for his beginning knife collection. I'm currently looking at the following but any and all suggestions are welcome!
- Yamashin White #1 Gyuto 210mm
- Tojiro DP Gyuto 210mm
- Tojiro DP Damascus 180mm Gyuto
- Fujiwara FKM Stainless Gyuto 210mm
1. Are you right handed? Both right handed
2. What type of knife are you interested in (gyuto, nakiri etc..) gyuto
3. What size knife are you looking for? 180 to 210
4. Do you prefer carbon or stainless steel? Either
5. Do you prefer a western handle or a Japanese handle? Either (I've used both and he loves both)
6. How much did you want to spend? $100 or under
7. Do you know how to sharpen? No but we'll learn from his father

I think he'd enjoy a reactive blade which is why I was considering the yamashin. He loves the patina on all his older tools and the cast iron fan I managed to find for him. Plus I do like that it's easy to sharpen because he's said he's had bad luck sharpening (but without being taughtl

Handle is kind of simple and on the small-medium side and the edge is respectable.

The handle is decently shaped Black Micarta. It's more rounded than many other Japanese Western style handles and doesn't have that blocky feel to it. Pretty comfy and it has good fit and finish to it.
