Apologies for the lateness. I try to get round here everyday....

I was considering this:

5 pc sharpening kit: http://www.chefknivestogo.com/3pcstoneset.html
- Beston 500
- Bester 1200
- Suehiro Rika 5K

And finish off with either:
Naniwa Snow White (8K): http://www.chefknivestogo.com/nasnwh8.html
or Naniwa 10K (I think I would prefer this or similar I think): http://www.chefknivestogo.com/na.html

Then a 140 Grit Diamond Plate and Universal Stone Holder to flatten the 500 (and so I can get a stone holder as well): http://www.chefknivestogo.com/xxcdiplandun.html

And use the 500 to flatten the 1200. 1200 to flatten the 5K and the 8K/10K? I am worried that I might take off too much content when flattening stones if I only use a 120 grit/XXT to flatten all stones. Only since I'm a newb.

It's rather difficult to remove too much. I use my DMT XXC on my 10k Naniwa Superstone (which is chalk soft) and I've had that stone for maybe 6 or 7 years....I bet I've got another 20 years at the current usage rate.

+1 to FLATTENING all of your stones with a diamond plate.

DRESS each stone with whatever stone is next coarsest in your kit. It will not only get most of the scratch off your finer stones (less important than you think) but will get more and better mud going than any nagura.
