I've been browsing your site and studying up on J knives for a while now, and would really like your recommendation. I'm looking to create a kit of knives where the gyuto is in the $150 and under range. I would preferably like to try the wa handles. I originally was looking for the Globals, which I have been able to feel and use at retail stores. However, I've been looking at what else is out there in the more traditional styles.
Basically, I've been considering the Tojiro Zen line, but have concerns about the fit and finish of these knives. I've read that people have said the handles are larger than the plastic bolsters and need some sanding. I know you recommend the FKM line, but as far as I understand there are no wa handles. Is there anything in the price range (or slightly higher) of the Tojiros that has a better reputation for F&F?
The first purchase would be a 240 gyuto. Hopefully you can point me in the direction of a great wa in my price range! Oh, and I was thinking stainless as I have reservations about carbon knives at this beginning stage.

If you can stretch your budget just a little bit there are couple really good knives you could get.

Thank you! By your recommendation from before though, I assume the Takayuki handles are of higher quality? I just don't want any unhygienic gaps, and will be impregnating the handles with oil if needed. But i don't think I would be pleased with gaps between the ferrule and handle.
I just would feel cheated if I got a set of J-blades with yo handles! Silly, I know.
Would you still recommend the tojiro zen over globals? My grip is pinch for most gyuto cuts, and i only hold the handle with my middle and ring fingers lightly. Global handles felt fine in the store.

The Tojiros are good. You can fill any small gaps with bees wax. That's what a lot of people do to keep water out. Mineral oil would work as well. The nice thing about Japanese handles is you can easily replace them over time.
Yes I like the Tojiro zen over Globals. They have better steel.
