Yeah, I've only ever seen the micarta one's and I believe that's the current material.

Whether its paper or linen, I don't know.

Version 1 was pakka wood
Version 2 was micarta
Version 3 is currently G-10

I'm glad that it's G-10 now. I'm still stuck at making the decision to purchase, still now sure which size to get.

I did just order a Tojiro DP in 240mm from Japan to test out how I like the 240mm, It was a good deal and shipping was cheap and faster than if I get something from the US as Japan is nearer. My brother is willing to take it if I don't like the size. Best course of action I could think of, I hope I like it.

By the way, how would the tojiro compare to the artifex?

The Tojiro will feel heavier and clunkier than the Artifex. It will feel more heavy duty, where the artifex will feel a bit more nimble.

The handle is more substantial. It has a bolster in the handle construction. It is clad steel. It will be slightly thinner at the edge OOTB than the Artifex.

Okay I just got the Tojiro DP 240mm last monday and this thing is huge and heavy. I feel clumsy using the knife not having a lot of control especially when using the tip, now I'm not sure about the size. I put on a 26 inclusive edge and it cut's like nothing I've ever handled. CKTG shows that the Artifex 210mm is their top seller and that's something for me to consider, I was hoping the 1inch+ wasn't substantial but now that I've held a 240mm it just feels way off. I'll continue to use it and hope to adjust. Hope I don't injure myself in the process.. :(

RJ <> Relax... the only thing stopping the acclimation is your mindset. You will get used to the 240, and you will wonder why you ever wasted your time w/a 210. It will happen... believe it.

Haha! I think it's the weight the bothers me more. This thing weighs more than double what I'm used to. Maybe I just need to try a lighter 240mm :)

Did you get the Western Deba 240 or the DP Gyuto 240mm? The Western Deba is VERY heavy!
