I'm in a conundrum with choosing my first carbon Gyuto to finally replace my tiny utility knife that I've been using to cook the past several years. Just as I've set my mind to buying a Kohetsu for the AS and superb reviews, a new shipment of Goko Damascus at $100 USD has made me double back on my decision.The Damascus design and profile of the blade looks beautiful, but as a newbie sharpener, will the Swedish stainless steel be tough to sharpen? Is it simply worth it to spend the extra 70 on the AS? Thanks in advance for checking out my post!

At the end of the day I would bet the Kohetsu will be the better knife, better steel, better grind, better cutter. $70 better? Well that is subjective.
The Goko damascus is brand new so it will be awhile before we know it's true qualities but I doubt it will be a dud, especially at it's introductory price.

From what I am seeing with the 19C27 used in the Suisin Inox Honyaki series a couple of reviewers mention how easy it is to sharpen.
From notes on 19C27 itself it looks like a pretty tough, high carbon content stainless. Sandvik's site says it's intended for industrial use, like cardboard cutters. lol Of course heat treat can change some of the characteristics, but overall it looks like it will be just fine for a kitchen knife blade, especially if it done anything like the Suisin knives. I dunno if it will take as fine an edge as the Hitachi white or blue steels, or AEB-L, but I think it will be just fine at the price it is at.

R. - If you can, I'd wait a bit until there's some concrete feedback on the new Goko before deciding. That 19C27 shouldn't be too bad to sharpen. It's slightly more wear resistant than AEB-L, which is pretty nice to sharpen for a SS, so it probably won't be quite as easy to sharpen. Then again, Aogami Super is wear resistant as well and it's slightly more work to sharpen than say Shirogami (White paper) steel.

Aaaaargh ok...I've been lurking on these forums since August researching and I know I should definitely wait until feedback comes on the new Goko since I believe AS is better than SS in almost all categories other than maintenance. So it's more of a question of 70 USD being worth the extra sharpness, sharpening ease, and edge retention...does this sound about right?
