Both are nice. The Artifex should take and hold a finer edge for longer than the Fujiwara. Blade grind, the Fujiwara may be a touch thinner towards the edge, but the Artifex aren't too bad. Bolsterless means the knife is lighter overall, but many people like the looks of the bolster.
Both are great entry level knives!

Awesome! Thanks, that's exactly what I wanted to know. If it keeps it's edge longer that means I wont have to go over and sharpen them as much
