 Post subject: Gift for my wife.

My wife loves to cook and I want to buy her a new knife for her birthday. She currently has a few stainless chef/santoku knives and is happy with them but they are not as sharp as she would like.

She loves to cook Asian food in general, does a lot of chopping of vegetables because of this. She does not do much meat or butchering type work. I think she would be fine with a carbon steel knife as long as it’s super sharp and holds it edge well. I would like to keep the purchase under $100 if possible, do you have any recommendations you could point me to? I recently bought the Tojiro DP from you for my cousin and my wife seemed to like it so that’s a starting point.
