We have a massive amount of Edge Pro products so we figured it would be good to have a whole section on how to use the machine and what to use on it.

Sadden, whats the reason for the Atoma 400, 600 and 1200 stones?

http://www.chefknivestogo.com/stsetwiunhob.html is the 140 plate on this the same as the 140 atoma plate?

Ok depending on the above question I think my list will look like this;

http://store.yahoo.com/chefknivestogo/edprocufumo.html I think the full monty has all the things I'm leaning towards.

additional shapton glass stones 220 "out of stock" http://www.chefknivestogo.com/shglst220grf.html

probably the 16k http://store.yahoo.com/chefknivestogo/shglst16kfor.html

atoma 140x http://store.yahoo.com/chefknivestogo/at14dipl.html

atoma for edge pro http://store.yahoo.com/chefknivestogo/atoma1403.html

1 micron diamond spray 2oz http://store.yahoo.com/chefknivestogo/1midisp10cah.html

nano cloth 5pc stropping set with stone holder "out of order" http://www.chefknivestogo.com/nacl5pcstset.html

Maybe over my original budget but I have since worked out that I can spend a little more then first realised :D

Thank you all for your reply's, How is this list looking?

No. The Atoma is a premium plate with a proprietary method of orientating the diamond particles on the plate in which promotes efficient scrubbing of swarf. Furthermore, they are reference-plate-flat. That is why they cost $100 more.

The "full monty" set comes with a 320 GS. I'd get a 2000 instead of the 220 you linked as the extra stone. I have both the 220 and 320 in my set and you really only need one or the other. The 2000 GS is a great stopping place for many kitchen knives and if you are going higher than 2000 it's a great bridge from 1000 to 4000.

Otherwise it looks like you'll be set!

Melampus is CORRECT, that diamond plate is NOT the same as the Atoma. Imagine going 4 wheelin' in a Yugo instead of a Hummer. The difference is like that.

Parodox is absolutely right about the 220 & 320, you only need one or the other.

All good, I was just going off what you said earlier paradox: "Optional now or later 150 Nubatama or GS220/320 etc. for the move from the 140 Atoma."

never hear of a yugo, looked it up and the first heading I came to said is the yugo really the worst car in history lol

ok looks like I'm good to go, how would I go about sharpening a knife like this with a 50/50 edge grind? http://www.chefknivestogo.com/riarbrkn27.html

I would recommend ceramics. The Spyderco Sharpmaker works well with serrated blades. I used the Sharpmaker about 2 years ago before I got my Edge Pro.After the EP, I only kept it for quick touch-ups, and serrated blades.

slice - That's a great bread knife. If you just use it for bread you may never need to sharpen it. If you do I suggest a round stick style sharpener or one of the sharpmaker sticks. Look around there are plenty of options for sharpening serrated blades. I have a nice little cone shaped one from DMT that does well.

Blue 45 microns
Red 25 microns
Green 9 microns

Ok now thats the sharpeners sorted, now to choose these Knives :D

oh and didn't realise but the 2k was meant to be on that list
