Hello -- My question is about the Fujiwara 270mm Sujihiki. I am a left-handed user, interested in an affordable slicing knife I would use at home, primarily for sushi cutting. I am interested in the Fujiwara but I have noticed that the grind is 70/30 to the other side. Do you have any that are ground to 50/50 or is it even going to make a difference? I have a few stones at home, if its not going to be a huge hassle I can even out the grind on my stones. Or do you offer a service to adjust the grind back to 50/50 before it is sent out to me? Thanks for your time.

The short answer is it won't matter. It will work just fine for you and the first time you sharpen it you can even it out if you like.
