This is my fujiwara/kanafusa I got from mark several yrs ago. It's 2n carbon and takes a wicked edge on these j-Nats. I did my best to show the knife with the stones and the toma (slurry) stone. The meara and toma were purchased through ken Schwartz and the other from CKTG along with the knife which was on close out and I think I stole it as well as it performs. A video is available on you tube under jmbullman2 but I will try to put one here

Thanks Jason and I hope your doing well. I can't remember we're you using j-nets yet if so which are you favorites or which ones don't you like. These cut this steel pretty well but it was just for touch up purposes I had to break down some sirloin for stir fry and it was one of those cutting boards made out of thick rubber and just light pressure damaged the board. I bleached it but I am worried about confirmation. My wood board seems faster and cleans up well I might just use one side of board for meats and the other for veg. It's round end grain and has two cutting sides these thick plastic ones scare me

I don't have any J-nats yet. Maybe sometime in the future, to many other things that I want right now.
I use a wood board for all my prep now. I've tried several other types of boards but nothing compares to a good wood board. I think your safe after the bleach but I'd be saying good bye to the rubber boards.
