Anyway, its my favorite daily knife in the kitchen. Slices beautifully and stays sharp much longer than my other knives. Its light for its size, but still feels good and its not too big with a grip that fits my hands nicely.

I don't have any custom knives yet...but I have my eye on a few!

I already have a Doi. It's really the knife that accelerated my addiction to fine kitchen knives. I personally love all things japanese and Master Doi is one of the finest makers around. I don't own a deba yet, but this knife will be mine soon...............myyyyyyyyyyyyy precioussssssssssss !!!!!!!!!!

This is the apex of practical cutlery.
There are so many details that make it perfect. It's changed the way I think about my cutlery, most of all by making it very clear that a $40 knife can contend with one costing $400.
I use it for hours on end, every day. I love this knife.

I love my Kikuichi TKC to breeze through prep work, and my Konosuke Mioroshi Deba for tougher stuff but Im picking the Kaizen because it can take a real beating on the line for a full shift, hold an edge and get one back when needed, fits very nice with its rounded spine and indented heel. Mircarta handle gives extra grip when wet and I wouldn't be afraid to let someone else use it.
