I am slowly upgrading my knives and would like to invest in sharpening stones. I am happy to try free hand sharpening (and I think prefer this as a general purist, to edge pro), but am just starting. Am I better off getting your 8 piece set, and then upgrading later, or does it make sense to pay more now for a 3 piece Chosera or Shapton set, and also buy a diamond plate flattening stone? I do need to learn, but would wind up paying more to buy a starter set, if I then chose to upgrade.

The set you are interested is the best all inclusive set of sharpening supplies you can get. The stones in the set are excellent and you won't have to upgrade them. The 8pcs set is the best all around set on the site. You will want more stones later down the road but it will be out of curiosity and not necessity.
