My homemade pizza with carmelized onions, anchovies, tomato, cheese and hot pepper, Sicilian style. The leftovers if there is any are great in the morning for breakfast.

A guilty pleasure to me is something that is something that is kind of gross, definitely low brow, that you are embarrassed to admit that you enjoy.

Mine is a cone full of fried cheese curds. Good from a bar...better if they're from a Wisconsin summer fair. Molten hot, dripping questionable grease, way too salty. Gross. I love em.

My Cholesterol is bad, which is why I got into CKTG knives - I own a several and they motivate me to eat veggies, as I practice.

Pulled pork, which I slow cook from anywhere from 9-18 hours.
You never know how long it will take. Set the cooker for 235 degrees, mix in some alder chips, which mixes well with mesquite charcoal, it softens the mesquite.
The pork will slow rise to 165 degrees at which point the temp stops rising, in fact it sometimes drops. This is called the stall, it can take 2-5 hours. The fat and collagen in the pork shoulder slowly melt and break down and cool down the meat.
You continue cooking till the internal temperature is 195, let the pork rest.
The fat has melted into the meat like butter, and the meat is so soft it can be pulled apart with a fork. The butter effect of the fat keeps the meat moist and succulent. In addition the outside of the pork is called the bark. The bark is crisp, has most of the seasoning (the rub) and can be chopped up very finely and mixed in with the pulled pork.

When pork is done correctly you do not need a BBQ sauce, a light dressing such a a cole slaw dressing will work fine.
Making a Sandwich with Cole slaw and kaiser roles will make this perfect.

I'll have to go with three things. One is Ben & Jerry's Chocolate Fudge Brownie ice cream, another is pumpkin pie... A third is this taffy candy I pick up at a local Korean supermarket, pumpkin flavored, a little tougher to start chewing than a salt water taffy but tastes like pumpkin pie to me.. ;)

At a previous job Chocolate Cake trimmings from the pastry department. they would always bring me a full hotel pan, and of course i would eat them all day long.
