My dad had a short but solid repertoire of dinners he would make during the week. they included things like steak, spaghetti, and taco night... but my all time favorite was what he dubbed "omelette." unlike the omelette that you might be thinking of, this "omelette" was an amalgamation of steamed rice, scrambled eggs, and boiled hot dogs. I still can't get enough of this stuff (especially with crystal hot sauce and the essential Mrs. Dash seasoning...), and have even made it at work for family meal, to great applause!

Meatballs of moose with mashed potatoes and a brown sauce served with lingonberries.
And yes, it was rather weird food even for a Swedish family.

It may be hard to believe, but as a child I used to love spinach. I was a big Popeye fan and it was spinach that made him the a#$ kicking hero every afternoon.

My favorite meal was roast beef wMyith popovers. Also known as Yorkshire pudding. Roast pork with the crackling was a close second. Always loved it when Dad started sharpening the knife to carve those roasts. We'd always get a little taste of the goodness to come.
My least favorite meal was Chicken A la King. The Campbells Cream of Mushroom soup was so salty and gross. They promoted that meal as a quick dinner for busy Moms to make on TV commercials. It would make me nauseous. Today I can eat pretty much anything, and Chicken ala King is not bad with good Cream of Mushroom soup.
