I use the 3 stones that Mark put together. Beston 500, bester 1200, and the Rika 5000. I have also added a Balsa Strop with some Boron Carbide. That stuff is amazing.

Bevel setting - latte 400

Then nubatama ume 1000 for initial 'sharpening/scratch removal'

green brick for polish (I stop here for some knives)

king 6k (I know....I need something better here!)

nubatama 10k if im feeling froggy!!

Generally just go from green brick to a couple passes on untreated horse butt strop

For the past 6 months I've been using a 1000/4000 stone I picked up in Japan to practice the basics.

I recently picked up a Naniwa sink bridge, the "Mr Knife Fanatic set" (Latte 400, Green Brick of Joy 2K, Snow White 8K) and balsa and leather strops.

Also use various strop compounds on balsa and leather strops.

I use aluoxide (ceramic) stones, they're cheap, but I'm only a beginner.

They have the following grits:
240
800
2000
5000

Retouching my Yaxell knives with this, I start at a quick few passes on the 800 grit and then up to the 2000 grit. I use the 5000 grit to kind of polish the finish.

I haven't so far sharpened any really expensive knives, just trying out techniques on my factory knives (Yaxells and Globals).

In the future I'd like to switch to either chosera stones or an EP system with choseras.

For many years I used the EdgePro with my German steel knives. I recently started to acquire Japanese knives and am now learning to sharpen with stones. I currently switch back and forth between the two depending on the knife but plan to move to stones exclusively once my skills reach an acceptable level.

My sharpening process is usually different for just about every knife so I'll just say what was done for my last knife I did. The knife was a Richmond Artifex 210mm Gyuto in M390.

Re-profiled with 140 Atoma on EP to 10 degrees
220 stock EP
400 Chosera
1000 Chosera
5000 Chosera
10000 Chosera

Up the angle to 15 degrees and went back to the 5000 grit Chosera stone and put on a micro bevel. Was all done on the EdgePro.

I use the edge pro with a set of chosera stones.
I progress through the 400, 1k, 3k, 5k, 10k and finish with a balsa strop with 1 micron diamond spray

I use a king 1000 grit, followed by a king 6000. Looking to get into a 10 to 12 thousand stone next.
