Mostly a Chef’s Choice 315S :)

Also been using one of the Takeda hand held whetstones in an effort to get more into using stones.

Afternoon,
Owning 2 Carbon blades (Tojiro Shirogami ITK 240mm Wa-Gyuto and a Moritaka Supreme 165mm Petty) I was entering the world of Japanese knife with what I believe two great starters. The stone I chose (being on a budget) was the King Combo Stone 800/6000 as my first stone. These blades keep a nice edge and after putting them through a good ringer daily , I'll take them to a stone every 3 weeks or so, working rough to fine and removing burs with a few swipes through an old cutting board, to finish I'll use a rust eraser to give them back their glow. These were my first every purchased Japanese style knives and they changed my view of what I believed was sharp in the cutlery world. To help me become better at sharpening my blades , I refereed back to Chef knives and viewed some of the videos that were posted in the site. Thanks again for giving me a better understanding in the World of Japanese cutlery. Cheers!

if they need it, I start with a 500 shapton glass stone. I finish with norton wet stone 1000 then norton wet stone 4000. I hone them with a MAC ceramic rod.

This method works for me.

I have water stones in grits 400,1000,3000,5000 1000/6000 combo and 8000. I also have diamond stones in 250,325,550,750 and 1200 grits. I don't use the diamond stones much since getting into Asian knives and water stones. I enjoy sharpening as it's a relaxing diversion for me. My routine depends on how long since last time and usage.
I try to stay up with my knives and only use the higher grits, saving the lowers for repair of chips or when I want to change an angle. I must admit that I have a MAC Black Stick that I use if I'm in a hurry and need a quick touch-up.

Depends on the steel.

52100 with a good HT:
Leather Strop with diamond spray. Keeps it sharp for months!

As my skills are not insane, I use an expert to help me out on jnats :)

As I've been practicing my sharpening on fairly low alloy steels, I've mostly been using a cheap King Eagle C/F SiC stone followed by some Spyderco Fine stones. However, on some of my nicer knives I've been practicing with a King 1000 followed by a Green Brick of Joy and the Snow White 8K. Still haven't been able to get a sharper edge off than off the Spyderco, but I've only tried a few times.

My knives are rarely dull so typically my full progression, if I have to go there, is a Bamboo 1200, Rika 5K, and a Yaginoshima w/naked horse butt.

Profiling & repairs I leave to my Atoma 140, 600, 1200.
