Depending on which of my knives I sharpen depends where I stop. Sabaki bocho only goes 1k edge with a few strops on 5k. Petty goes 8k edge with diamond stropping. Gyuto gets a 5k edge with a few strops for burr removal.

Access the condition of the blade, clean if need be, straighten if need be. I break out the 24 grit Ume if the situation requires some thinning, re profiling, tip repair, etc. Move to my 150 Nubatama to set bevel, followed by the 400 if it's a wear resistant steel, otherwise I'll skip it. Enter my Nubatama 1K gold, I perfect my edge at this point, slightly adjust bevel geometry if needed, remove burr, make sure I can shave hair and slice cleanly through telephone book paper. Depending on the knife I will have anywhere between 1 to 3 stones for finishing. If we're slicing protein I might stop at my 1200 or 3K stones. If we're cutting veggies I might bump up to my 5K or Yaginoshima. De-burr, strop on kangaroo in many cases. Enjoy the look on my family/friends faces as the admire the results. On to the next blade.

For a complete rework I have a coarse and "fine" diamond stone made by Smith I believe. For the finishing work I've been using the Naniwa superstones that I bought from CKTG, 1000 and 5000 grit, and Ive never looked back. I have been meaning to pick up the green polishing paste for the overkill but I haven't had the money lately.

Edge Pro user here. If I'm reprofiling (likely) I begin with the Atoma 140. I will then work through the EP progression. Some combo of 120-220-320-400, then on to 600 and 1K, followed up by Shapton Pro 5K and 8K, then the 1u EP tape. Flatten with a DMT.

I'm waiting for the 150 Bamboo for EP to get back in stock because I think that may be the perfect bridge between the Atoma 140 and the EP 320 (a great stone).
