Sun May 13, 2012 3:53 pm

Hello,

My name is Yosi and i am a mechanical practical engineer. I loved knives eversince i can remeber. I have decided to make cooking and straight razors knives as a hobby.
I have purchased some time ago Naniwa waterstones 1k, 5k, 10k.

1. could you please recommend a kind of DMT as a truing and straightening unit for those stones.
2. I saw in your web site the finishing stone by Ozuku Asagi (koppa) and wodered for the availability of this stone in the near future.
3. one of the best kinds of Japanese steel for knives and maybe razors is called SRS-15. can you please tell or check as who is the manufacturer of the steel ?

Yours,

Yosi

Hi Yosi,

The DMT XXC is the one I recommend for stone flattening. It works well

We should have more Ozuku koppas in a couple weeks. I'll email you when they are available. They usually sell fast.

I'm not sure about the manufacturer of that steeel.

I just started a new forum for Chefknivestogo. Do you mind if I use your question and my answer? It will help others who read it. I'll only use your first name if I post it.

SRS-15 is good steel. I'm not sure who makes it. Here is a look at the composition: http://zknives.com/knives/steels/srs-15.shtml
