I am new to the forum and would like some help picking out a new knife
I am right handed and either looking for a gyuto or a nakiri. The size of the gyuto I would like is around 210-240 and as for a nakiri I really don't have a preference since I haven't used one.
The type of metal doesn't bother me just as long as it takes a nice keen edge.
Although I have never used a wa handle that is what I am looking for, but am open for yo handles if the knife peaks my interest. I would however like the handle to be wood along with the ferrule( could be horn as well)
I would like to spend roughly $175
I do know how to sharpen but I am by no means an expert at it.
The knives I have been looking at are as followed in order of interest:
Tanaka Sekiso Damascus Gyuto 210/240
Tanaka Sekiso Damascus Nakiri
Goko Gyuto 210/240
Moritaka Blue #2 Gyuto 210/240
Hiromoto AS Gyuto 210/240
Itto-Ryo Hammered Gyuto 210/240

Tanaka Sekiso are awesome. A gyuto is a bit more versatile than a nakiri, but I love nakiris too!

Off your list, I favor the Sekiso due to profile.

I would go for either the Tanaka or Goko gyuto. Both of those knives rock, not that the others on the list don't, but if it was my money that's what I'd probably get.
A nakiri for a first knife will ultimately leave you wanting more. Getting either one of those gyutos will set the bar mighty high for all other knives you purchase afterwards. http://www.chefknivestogo.com/gokogyuto240mm.html

I forgot to mention that this knife wouldn't be the first high quality knife. I previously had purchased a Richmond Addict in AEBL, this is why I am considering a nakiri. And also is there an estimated time that yall expect the Tanka's to come back into stock?
