COACH <> Absolute first JK, was a no name 150mm yo-petty back in 1995/96. There was this knife guy, "FAT FRANKY", that drove around in his van sharpening with a cheapo grinding wheel, and he sold knives/tools, as well. I later bought another as it performed so well. It has a kanji stamp on the side that translates to, "MADE IN JAPAN 1995" but nothing else. It has a teflon-coating that was/is truly nonstick; plus it's laser thin/light. It was such a wild divergence from anything I had used way back then. There's a pic back in my "inventory thread".

My first was a 210 Misono 440. Got tired of the heaviness that was the Wusties.
I still haven't found my "it" knife. You know the one that really lights the flame in your heart however
I shoulda listened when everyone said it was an addiction lol

First J knives was a pair of Masakage Shimo's.
I was looking to upgrade my kitchen knives, they were highly regarded and Shimo is a family name so I could not resist. I purchased a 240 Gyuto and a 120 Petty.
The knives are living up to their reputation, they are fantastic.

My first J-knife was my Masakage Koishi 210. I picked it up after getting to try a couple of a friends knives that introduced me to this fine new world. Now that friend asks me for advice on knives. Man it sure is cozy here in this rabbit hole.

My first was a miyabi 5000 MCD. pretty knife but not as nice as masakage shimo.

The old standby...Tojiro DP, am still impressed with its bang for the buck. Then the obligatory Konosuke HD, Tojiro ITK bread knife, Tetsuhiro nakiri and am now developing an interest in Japanese natural stones. I think I'm in trouble...

Tosa 170mm Satsuma knife from Japan woodworker in Alameda (now closed).
Satsuma = very fancy way of saying Santoku.
