Finish sharpening

Can one of you gurus please explain what you do when someone pays the extra bucks for "finish sharpening"
Specifically this would apply to a new knife.

Are there any videos on the subject?
I for one would like to see it done.

You pay for the experience and ability. Most of us have premium stones that compliment our skill set and allow us to create edges the factory cannot. It also allows us to create edges with a sharpness most only get to read about ;)

New or used they all need maintenance at some point.

Most factory edge's are something akin to an 800 grit edge. These guys make it much sharper and can even out slight imperferctions before you ever use it. You'll know the knife's full potential when you unbox it.

from a business perspective, it's more like they just don't wanna be bothered doing better sharpening on the edges. it's just more expensive and takes too much time.

or we can look at it this way, the people who buy these knives will have to sharpen them up any way.

and it really depends on the user's preference and needs.
