Could you tell me what the HRC is on this knife?

Also if you have it the Spine thickness, Edge Deg, weight, and height at heel.

Thank you for your time. KIM

Hey Kim,

Thanks for the questions, sorry I didn't put the specs out on the product page sooner.

The Hardness is 61 Rockwell, The thickest part of the spine over the heel is 2.4mm, weight is right around 190 grams, and height over the heel is 48 millimeters. Each blade is being sharpened with a 15 degree edge.

Another note: This steel is incredibly tough (s35VN). I've gone through small bones (chicken breast/ribs) and had zero chipping, then banged it into the board (maple) extremely hard for 30 seconds straight, the edge was still perfect. Corrosion resistance in incredible also, I believe it would take a lot to even discolor this stuff. Sharpening characteristics are top notch: Performs more like a good carbon than stainless.

Thanks again, I hope this helps!

Also, it's actually pretty easy to sharpen (expected worse) and it polishes VERY well.

Alrighty then, just ordered one, I will post my experience with this gyuto after I have cut up a few winter squash and a knuckle or two! Looking forward to experiencing this s35VN steel.

Having used one over the weekend I think you're going to be impressed.
