I bought the Moritaka last year on a members' recommendation/ review of the knife and love the thing.
OOB it sliced 2" thick stew meat like it wasn't there. I'm not a chef but it was the best I've ever used.
Since there's just my wife & me I don't use it as often as I'd like to but some times I'll slice just 2-3 carrots for a soup.
I found it to be DAMN awesome .

My count still isn't there, but this is something I would be very interested in at the right price. I've thought about the bigger investment in the KS on a number of occasions, and this doesn't seem that far off (I don't doubt major differences, but I do doubt they'd make a big difference for me at home). If I got a 250mm gyuto, I would want this type of profile.

The blades are forged, so right out of the handle, they are thick and quickly taper down. Salty did a video of them and didn't feel it was to thick. Heck, the AS Laser gyuto is over 4mm out of the handles and drops to near 2mm just past the heel.
The Ikeda Damascus AS core is a similar profile and thin, too.

Have you used one? Mine was anything but a "wedge monster". Spine thickness has very little to do with wedging, BTW.

I'm really hoping he does something I don't need at all so I have another couple weeks to get up there. because Id love to get this knife. I use a KS Masa that isn't mine pretty often at work, and its just fun to have that different profile. I have so many "classic" profiled knives… its just really cool to switch it up once in a while.

If the moritaka is this months sale I'm going to be all kinds of bummed. Can anyone tell me how reactive the cladding under the kurouchi finish?

I dunno, worked with a guy who had a few caters and knew his stuff. Advised against getting anything thicker than 3mm spine for
