I also think a 250 might be a little to big for my home use, I'm just a home cook and don't need to prep a ton of items. But then again I never use to like 240 mm knives either, as I felt they where to long for me, and now that I have been using 240's quite a bit, 210's feel to short. But I would like to try a Moritaka though. Hmmmmm.

Why would it need to be thinned?
As for rock chopping, I find my buddies ks madam pro is a great rock chopper.

Came pretty sharp out of the box, just took it to a couple strops.

Haven't been able to carve the 5lb beast of a prime rib in my freezer yet but maybe this Sunday.

The profile is a slicer indeed, not sure you could use this for prep but it's a wicked slicer for fish.
