Super informative video. When I do make room in my lineup for a top tier knife it will be in the running.
Ive noticed when you talk of OOTB edges being sharp but not toothy, you say that is easy to fix. Are you referring to running it on a leather strop, or starting back at say a 1K and re-refining the edge?

He's talking about starting over, a new edge. However you already have a nice bevel to work with.

Stropping on leather actually removes teeth IIRC

Often, for a quick way to quickly put some tooth on the edge, I'll run across the Idahone fine ceramic hone 4 or 5 times per side.

If the edge bevel looks pretty good and consistent IMO you could also do some light work on a stone like the Suehiro Rika 5k to add some tooth to the edge.

I like to see what those things might do before going through an entire sharpening sequence. Exceptions are knives that don't have decent OOTB edges or edge bevels. Those get the full treatment.

Yeah, even in my limited experience I've come to love the Idahone rod, definitely gives nice bite to a blade that is mainly there but just needs a touch up.

Rayong - I do that as well. I put some Dia-Sharp 3 micron paste on a 3x11 balsa strop. I need to pull that out more often and try it :-).
