For me and another pro cook, money does factor into both.
Looking for your recommendation from the choices and where you feel the extra money is going to from the 1st to 2nd choice.
looking for a carbon 240 gyuto:
tanaka blue #2 or moritaka super
Another looking for a stainless 240 gyuto
tanaka ginsan or sakai takayuki grand chef

Without knowing more about you other than you are both pro cooks here goes:
I like the Tanaka Blue #2 over the Moritaka (this one is close since I like different things about each knife)
I like the Tanaka Ginsan over the Takayuki

I assume we are tanaka sekiso series? The tanaka sekiso gets my vote over the moritaka though each has it benfits. If its the tanaka kurouchi I would recommend the moritaka and it's not even close.
Which ginsan tanaka? If it's the one from metalmasters? I would strongly recommend avoiding.There are much better examples of budget jknives out there.
The grand chef gets my nod even though it doesn't get much love on this forum as it's only hardened to 57. Thats a little soft as the sweet spot for AEB-L edge retention is in 60-61 range, but at 57 you can safely use a steel on the knife and it can tackle some of the tougher jobs that would chip 60+ hrc knives. I still recommend a beater knife for tough jobs as they dull your edge in no time regardless of steel or hardness.

In the first race, I'd take the Tanaka over the Moritaka
Don't know which Tanaka Ginsan we're talking about though.

Im personally looking for the stainless 240.
I just want a solid somewhat thin wa gyuto,
under/ around 200, w/ a decent handle (nothing special, but no plastic ferule)
takayuki grand: low hardness
konosuke hd2: $$

Tanaka Sekiso 240mm for an awesome performing carbon gyuto; buffalo horn ferrule on it so no worries there!
For the stainless Wa handled knife, have an Artifex or Addict thinned and converted to a Wa handle

The Tanaka ginsanko is a good knife and I'm happy with mine. The only downside of the knife - at that price the quality of the fit and finish is lacking. Be prepared to replace the handle and some light grinding on the blade to relieve sharp edges on the spine and heel. The metal is excellent and the grind is acceptable however, out of the box, it still seems unfinished. If you purchase it, understand it is going to need some work all around.
