Why is it important to start with the finishing stone ? Since moving back and forth between the stones preserves the angle then starting with the first, last, or any stone in between should be the same, wouldn't it ?

Heres what I do.

I get set up , and then use my coarsest stone.
After I am done using that stone then I use it to set the drill stop collar like normal.

Heres why.

The coarser stones that I have tend to dish much faster than the higher grit ones. So I use my coarse stone ( typically a 320 or 1k shapton pro) and then when I set the DSC it has already taken into account where most of the wear in my progression will be.

Just what works for me :)

True, it will work as you say.

However there are very small tolerances/deviations at play during the changing of the stones while setting the drill stop collar.

As the edge contact with the final stone is critical for a "perfect" edge, I find setting the DSC with the final stone is more accurate ultimately.

I have tried both ways as well, but the last stone first, to me, appears slightly more accurate.
