Edge Pro sharpening questions.

Hi Mark,

I have just watched this movie http://www.chefknivestogo.com/tastclnala.html, tested my nakiri and the edge pro doesn't actually go as steep, must be under 10 degrees. I thought it was from thinning the blade not the actual sharpening angle. So got me thinking that I might get some stones, I like the shapton glass stones some maybe those.

Hi Eric,

You can decrease the angle on the edge pro a little by putting something on the platform to raise it. You could take a paint stick and cut it to size and then tape it down to the top to raise it a little.

If you want to try some stones I find it a little more enjoyable since there is some skill involved. The shapton glass tones are good ones and easy to learn on.

Hi Mark,

just used the sharpy trick and modified the edge pro to get a angle of 3.8 degrees but it didn't go all the way to the edge because I already sharpened it at 10 degrees, so I'm not sure if this nikiri has been thinned or if it's that 3.8 degree edge.
what do you think?

Hi Eric,

Allow me to post this on our forum. You will get a variety of helpful tips if you ask questions about sharpening here.

For me I don't get hung up on the factory edge since the stones will grind a new one. You thinned the knife so just set the angel you want for the edge and don't worry about the factory edge. At least that's what I do. You should be able to grind a better edge than the factory anyway so set your machine where you want it and grind until you get it.
