I'm interested in the Edge Pro Essential Set with Shapton glass stones….this seems like a great deal!
However, can you tell me if these stones would sharpen my Tojiro Dps? If so, I'm hoping you could enlighten me as to what angle to sharpen the Tojiros as I have read they are not a 50/50 bevel, but rather a 60/40 with right bias (?) This sounds pretty complicated!
I also own Wusthofs (both their Santoku and standard PeTech knives), along with a Global Sai. I'm sure I won't stop here though.
All these knives range from edge angles of 11 degrees to 14. Again, not sure what angle to sharpen the Tojiros, and whether to sharpen at 50/50.
I am a novice to the world of knife sharpening, but I definitely want accuracy when I do sharpen…
I particularly liked your video tutorial with the Edge Pro. I was wondering if you had other videos relating to the drill stop collar as it relates to different stone thickness, and too, if you could suggest any other references for understanding knife sharpening (single bevel, double bevel, on and on…..)

Yes the edge pro will sharpen all your knives without any trouble.
I would recommend setting the machine at about 12 degrees (you can guess) and forget about it. The first time you sharpen you will have to grind the edge to match this angle so it will take some time but then you don't have to worry about matching the angle of the machine to the angle that the factory put on the knife. Remember the stones will win.

Yep. If your that worried about it then theres always the sharpie trick. But i change the angles on most of my knives anyways so it becomes a moot point.
