Well, before I moved my plan was to get my Masamoto KS, and Moritaka yanagi rehandled. That got put off for a while, so that would probably be my next purchase. (Stefan just listed a bunch of new handles, too...ughhh!)

I'd also like to try a Kiritsuke gyuto someday. Maybe Kono Fuji or Takeda or Kochi......then I'll have to get that rehandled, too.that Kono

I'm also not much of a dreamer, but that Kono honyaki or the DT anniversary sure are pretty....

My kind of list No Chop..

I purchassed a Watanabe blue #2 Kiritsume Gyuto (double beveled) with a Marko handle from Mark a while ago, then I started the patina as a kimd of experiment and it looks almost like damascus... and its a sweet knife! Awesome cutter, really nice to use and holds an awesome edge... Highly recomendable.

For some reason Watanabe knives are not getting a lot of press recently.... Anyone know why? I really like them, their profiles are pretty good in my book... Maybe a tad belly ish!

Watanabe years ago was very popular. I recall hearing they wouldn't take custom orders of any kind, they were rather slow to fill orders, and made the decision to only sell their product direct. I think this disconnect with the American consumer has hampered their sales here....
