thanks, all, for your replies! i will look them over in more detail when i get a bit more time.

but my quick reaction is that i'm just going to have to get used to wetting the stones...

Soak until the bubbles stop coming out and sharpen until happy. If you don't soak them then you will have issues when sharpening.

okay, guys, you've convinced me. i have to soak the stone beforehand, and splash it periodically during sharpening. it's a bother--especially when i'm doing it at my friends' house--but i'd rather do that than buy more stones that are easier to deal with.
