Please help me choose a deba for processing large reef fish such as red snapper and grouper.I am right handed.Iknow how to sharpen.Blade should low maintenance .My budget is250.00 Thanks for your help.

either of these would be my first suggestion
don't know if you want stainless or carbon, I own a 180 tanaka, happy with it ootb edge needed work and the blade road wasn't ground 100% perfect but it cleaned up well on first sharpening..
don't know about the saji but I love g3 steel and his reputation is up there with the best so im sure I wouldn't disappoint.
for me a 180 is just big enough for a 10-12 lb salmon not sure if you need a bigger size or not?

I really dig my Tanaka. Its OOB sharpness wasn't great but it is a thing of beauty after you take it to the stones.
