Darken Kanji

How can you bring back that nice black color to the kanji on a blade after it starts to look like a faded grey?

Engraved or print?

Print, is gone when it's gone. Engraved, I don't know, but one of the knife makers, like Adam or Tim, probably will.

If it's engraved and the blade is carbon, you can etch the entire knife, then polish the blade with some Flitz.

You can try using a tooth pick, dip it in vinegar, and carefully fill the kanji, let it sit for a while, rinse and reapply. If you have ferric chloride, it will achieve the results in one maybe two applications. "Paint" around the print with nail polish, to use as a resist. This will protect the blade from any "oops" moments.
