I just bought my first professional German knife and I like it very much. I would now like to look into a Japanese knife. I am looking for a chef and slicing knife with a higher rh than the Henkel. Do you ever have damaged knives that you sell at a discount? What would you recommend?

For a knife recommendation I need more informatiion.
Are you right handed?
Do you want a Japanese handle or western handle?
Do you want a stainless knife or carbon steel?
Do you know how to sharpen?
How much did you want to spend?
