One thing I might add, if you're sharpening to a 5k and then using the idahone (1.2 k) you are losing some of the refinement from the stones. I might look into adding a strop or two to help keep some of the polish or stopping at a lower grit stone if you like the teeth. Maybe keep one knife polished and the other toothy to see what you like more, or which works better for certain things.

By the time you need the Idahone the 5k polish is long gone. The Idahone is from my understanding J3000 or 1200 ANSI and from using it a great for quick touch ups. I love mine.

Oh it gets worse! I don't even have a Spydie in hand yet and I ordered 2 sets of custom scales from MR's guy.
We better stop derailing this thread...

Thanks for the explanation. Thinking back from physics class you're absolutely right. It all makes sense now.
