Jbl - thanks for posting the question. Can never have too much info on food safety.
For cleaning my wood boards i use soapy water followed by a diluted vinegar solution. Wait 20 min for the acid to do it's job, rinse n oil. Does anyone else take this extra step?

Diluted bleach, vinegar, or coat the surface with salt overnight. The salt will absorb the moisture and kill the bacteria. If your not using it to cut meat/protein, then mild soapy water keeps it clean until you need to oil again. Wood has its own natural defense mechanisms against bacteria, thats why the dont multiply and die if left on wood.
