Called Dave at Boardsmith and I am going to leave it on its side in front of a fan from now until Saturday while I am away. It is practically straight now (and may be when I get home from work today), so those 4 days of sitting in front of a fan should dry it out. Then I'll make sure it is oiled well on both sides and go on using it. If it warps again (and he said it sounds like the board may have a water problem) then he asked me to call him and we'll take it from there.

I am going to use Swarfy's recommendation of only wiping it down and not using soap and water so that should keep it from warping. I will probably cut a raw poularde once on it and then use some soap and a damp sponge to wash that off. If it can't handle that little bit of water after all of this drying and oiling then at least I'll know there is no going back to it.
