I am buying a knife as a Christmas gift for my in-laws and have narrowed it down to a the Artifex. I noticed the difference with one being AEB-L and the other FKM. They are not the type that would ever sharpen themselves and would see it just as a really nice knife. The AEB-L will hold a better edge and is the better steel.

WADE <> I reckon you have noticed they are handled differently, as well... western:eastern (yo:wa). And as Jeff mentions, the AEB-l is the superior alloy.

Thanks guys … in regards to the style .. that was going to be my other question .. I had hoped to get them a Wa … not mandatory but would have been nice. It looks like I'll go western for the better blade.

I've owned both of them. A home user is not going to be able to tell the difference between the two in terms of steel.
The geometry (grind) of the wa-handled Artifex is superior - thinner behind the edge so the blade cuts better.
My choice would be the wa-handled version.

I can see both sides.
The Wa handled Artifex is a better cutter out of the box, but the western handled version is slightly more robust if it's for an owner that might need such a knife. I still have visions of horror of my step-mom prying a roast out of a pan with one of my knives.
Like Rick said, out of the box, the wa handled Artifex is a better cutter....the western handled version has the better steel but this might be irrelevant to anything but a connoisseur.
