First and foremost, thanks a ton for the really prompt response! You’ve definitely helped to save me the money I would have spent on the Damascus.
That being said, I’ve also been looking at your Richmond Artifex line of knives – specifically the 210mm gyuto. Could I trouble you to give me a point-by-point comparison between your Artifex and the Tojiro DP? What would you say are the respective pros and cons of each knife?

These two get compared all the time. Here is my feelings about them.
Steel: Tojiro uses VG10 and the Artifex uses AEB-L. Both are good quality stainless steels. The VG-10 that Tojiro uses is a little chippy and takes a good edge. It holds it pretty well. Shun uses the same steel on their knives and charges a lot more for their knives. AEB-L is one of my favorite stainless steels. It has tiny carbides and was developed for razors. It sharpens up extremely well and is pretty tough at around 61 rockwell. For steel I rate my knife better.
Handle: The handle on the Tojiro is pretty good. It has a integral bolster which adds weight and most people like. There are sometimes small gaps on them and some people complain that they are blocky and large but I don't really get the complaints. For this price the handles are just fine. The use this composite recylcled wood mix and they are switching over to black micarta soon but this has not happened yet. That should improve them when they do.
My knife has handle scales made from black linen micarta. It's very durable stuff and won't shrink or crack. My knife does not have an integral bolster. I ditched it to lower the cost and I think it's a good trade off but all things being equal having a bolster is usually nicer than not.
Grind. They both have pretty good grinds. I like the Tojiros a little better. They are also a little sharper out of the box than my knife. That's easily rectified by sharpening the knife but if you don't know how to sharpen you might want to consider the Tojiro.
Profile: The shape of the blade on the 210 DP is good. No real complaints. I picked the Artifex profile to mimick the Masamoto VG and I prefer the shape a little to the Tojiro but it's a matter of personal preference. No big differences here.
That's about all I can think of. You won't go wrong with either of them.
