Combo stone for my hiromoto

This is the first knife of this type I have purchased (hiromoto Gyuto 240mm)



I had recently purchased a combo whetstone (6000/1000) being told if I was going to get this style knife it is the best way to sharpen.



Any advice on the proper method for this? I currently have a decent batch or Henkels and Wustofs but usually just use an electric sharpener on them and it works fine. I do not want to make that mistake with this knife as I assume the carbon edge needs different care.



Anything you can offer would be great.

Hi Dave,

Yes it's much better if you use your stone. I did a bunch of short videos that should get you on your feet and sharpening your knives well freehand on your combo stone. Take a look here:

Yes, please don't put the Hiromoto through the electric sharpener.....PLEASE!!! :)

Mark's video's are a good place to start....after that if you have any questions, please let us know.
