Hi folks,

Really just started getting somewhat serious about six months, but here is the collection so far.

First pic, left to right:

Richmond Artifex 240mm gyuto extra tall
Richmond Artifex 165mm honesuki
Hiromoto Ginsan 120mm petty
Tojiro ITK 270mm bread knife
Kikuichi TKC 240mm gyuto
Kagayaki CarboNext 300mm sujihiki

Next pic, left to right:

used 10 inch bread knife from local restaurant supply/sharpener for 3 dollars
used 12 inch slicer from local restaurant supply/sharpener for 3 dollars (hilariously sharp)
Victorinox 3 1/4 inch paring knife
used 10 inch chef knife from local restaurant supply/sharpener for 3 dollars (faded logo says it's Greban, also hilariously sharp)
Victorinox 8 inch chef knife
indeterminate flimsy thin cleaver-ish knife, hilariously sharp

Unpictured: homemade sink bridge from scrap wood, set of Chicago Cutlery, you can see the bottom of the block there, that I had enthusiastically used and thought of as good knives for years until realizing they are decidedly not that upon receipt of that Victorinox chefs.

Hoping to add Konosuke 240 extra tall someday when my money returns, and probably a few other wa handles.

I know, not impressive at all compared to most here, but man I like this stuff, and felt like sharing.

Yeah, once I got it in my mind that I wanted something of a complete set there was no stopping it. Have to say I am happy with what I have. I haven't seen it reviewed or talked about much, but that little Hiromoto G3 took a crazy, hair splitting sharp edge. I suppose I am just getting better on the stones, but I am very impressed. Knife I use those most is the extra tall Artifex. Ever since thinning it I cannot get enough. Don't use the TKC very much yet; still kind of my prize that I just look at and admire the edge (though I have used it and been blown away).

Hopefully I'll have the self control to drag out the set of wa handled knives that I know I will eventually want over a few years.

I'm telling you, that 3 dollar slicer is probably sharper than the carbonext was out of the box. I suppose that isn't saying much however. (And certainly is no longer true, I assure you).
