Purchased Tojiro DP Chef Knife 210mm for my mom and that has become her go to chef knife. Admittedly for the past 15 years she used her Cutco knife every chance she would get. Now not so much! Want to purchase a Chosera stone for her that would be adequate for home use. Question is what grit would you recommend to buy?

I would recommend you get at least 2 stones, one medium and one fine. The choseras are good stones. Try getting the 1K and 5K to start.

I would rather suggest the 800 and 3k, the differences are small, though. I think the 800 is a little more versatile, and the 3k somewhat easier to use.
