I am looking for a generic cleaver that can be used to cut up a whole chicken. Do you have any recommendations?

It depends how you use the cleaver. If you're not chopping through bones I like the sugimoto: http://www.chefknivestogo.com/sugimoto-cleaver.html

I want to be able to chop a breast in half and cut out the back bone so, yes I need to chop through some bones. I also don't mind carbon. I like the look of an old blade similar to the last Fowler I got from you.

You need a reasonably heavy cleaver - not a vegetable cleaver. CCKs are pretty good and Sugimoto makes and excellent Cleaver.

Also consider a WESTERN deba for this as well.
