Loving my new Tojrio DP 240, have another question. Lately I've be butterflying a bunch of chicken breasts at the restaurant. Do you have a thin blade knife that would just slice these slippery breasts day in, day out.

Boning knives are very tricky since there are lots of styles and some people are particular about them and how they feel. Some like flex and others like stiff. Some of my customers like Honesukis for taking apart chickens. Have you ever tried one of these?

i like 150mm pettys for that kind of work.

What are you after knife wise? Carbon, stainless.....western handle or wa?

Thanks for the reply. I'm on a learning curve at present. Have a basic collection of Victorinox, added a Richmond Artifex 240, and just added a Tojiro 240 Gyuto. Like all the knifes. I'm moving into a commerical kitchen in the Spring, just want to keep adding to my collection of solid work horse knives, more interested in performance then show.

Just ordered the Yamashin Ko Yanagi 165mm. Should be a nice addition to my budding collection.

Will do. Knife arrives first week of January, as my GF will be out of town. She'd kill me with one of my great knifes IF she new another knife was on the way.
BTW, I looked at your web site, very cool new knife, great looking handle work.
