I am sure others on the board can give good suggestions to your need, but I would caution giving knives to someone who is passionate about knives and know what she likes.
I was given a nice set of Nenox limited edition knives awhile ago. They were rather an expensive set and they're nice. Mostly, they're in my knife bag collecting dust. When I need things cut, most of the time, I would reach for my Richmond Ultimatum and my Moritaka Nikiri. I just like their profile and feel better than The Nenox.
If she is a knife nut like most of us in here, I would try to get her input. It wouldn't be a surprise but you have a better chance to get something she loves.
Alternatively, she can swap for something else with Mark if your final choice doesn't work for her.
(I couldn't swap my Nenox because of the sentiment behind the gift, so I end up only taking them out when I am cooking for the person that gave them to me at home.
