Charcoal all the way, I use a Natural lump charcoal that is actually produced about an hour from my house(B&B Charcoal). And all the hype about it burning hotter for longer is true, I did some tests and it gets my grill about 110 degrees hotter than say kingsford briquettes. I actually grilled/smoked a 12.5 pound brisket yesterday. I kept the grill between 200-225, indirect heat and to be honest it was the best brisket I've ever put out. I believe it took about 9 hours or so give or take an hour.

I'm a bit of Luddite here, I only use charcoal. I do understand that gas grills are convenient and easy to use but I think with patients and a lot of practice charcoal is just as easy. Last weekend was Memorial Day so I've grilled 3 times in the last week, all with charcoal, and at three different houses. The *secret* to making this easy and quick is getting a charcoal chimney from any grilling store. They work quickly to get the coals nice and hot, just put a couple of pieces of newspaper under it and in 10-15 minutes you have enough hot coals to grill anything you want.

Been there, done that -- in spades.

Sorry, but gas is far more convenient.

That said, charcoal is better, IMHO, but gas is still very good.

I agree with the Green Egg. Try peach wood if you can find it. Use wax type starter stick and break it in half. You can get one of those grills to 700*F in about 20 min. for steaks. It is by far one of the most versatile around.
