Hello all -
I am interested in buying a chinese cleaver that is good for breaking down chickens and cutting through pork rib bones (and similar). I like the look of CCK and of course they get great word of mouth. The Lil Rhino seems about the right size and style to me but I'm not sure it would be suitable for pork bones. The big rhino and bone chopper I'm sure would do it but may be too much knife (I would use this for home cooking and don't intend on breaking down a whole pig or anything). Any ideas for a cleaver that falls in between these two categories in terms of size and performance?
Also, is the bone chopper stainless or carbon (or a combo)?

Chopping though bones would be trouble for the lil rhino or the 1303. You need something like the bone chopper for that, otherwise the edge will break.
If you can avoid bones the smaller and lighter cleavers are great fun to use but they're really meant for veggies or boneless meats.
All the CCK knives on the site are carbon steel. They all have a lacquer on them to keep them from rusting but it wears off with use.
