Aogami is still quite reactive. Better than white(by what i've been hearing/reading), but still reactive. It turns a blackish color if left...not sure if i've ever seen my #2 blue edge rust? (AS should be even better than #2 tho)....the cladding will still rust, but who cares about the's easy to polish that out. By the sounds of it, AS with stainless clad would be a better option if you wanted to go with Hitachi steel. But, you say you love the edge on your shun...i think that's vg-10? So you might like stainless better. I love Carbon, but i'm pretty used to it now, so it's tendencies don't bother me anymore.

The superior edge and easy resharpening are what i like.

I chose that knife because it seemed to fit your basic criteria, it has a nice handle(by my standards) and great steel...and, it's not terrible expensive. Has that sweet french profiling too...
