Thanks everybody for the help, all the coments helped me to have a clearer idea of what will I have to do, I really don't want to ruin my new baby. When i get the knife and have some experience with it, I will write a post saying exactly what I did, what were the results and the overall opinion. Thank you very much again!

Man, totally missed this topic.
The Kohetsu, like others have said, is stainless clad. That really takes a lot of the worry away.AS is not Shirogami either so you should be just fine.
+1 to Taz handle suggestion. The oil will help keep water outof the wood.
